- 1 large juicy tomato (heirloom), cubed
- ½ mango, cubed
- 1 shallot, sliced
- 1 garlic clove, minced
- Few sprigs of cilantro, chopped
- 1 Tbsp. olive oil
- 1 lime juice (2 Tbsp.)
- Salt, pepper
- In a medium bowl, mix together tomato and mango, add shallots, garlic, cilantro, olive oil and lime juice.
- Season with salt and pepper, stir well and serve.
