Stuffed mushrooms are great appetizer, starter or a side dish. Easy to prepare and delicious.
- 10 medium size white or cremini mushrooms, cored and wiped
- ½ pound ground pork
- ½ yellow onion, chopped
- 1 medium carrot, chopped
- 1 celery stalk, chopped
- 1 garlic clove, minced
- 2 tbsp. capers
- Few sprigs thyme
- 2 tbsp. olive oil
- Salt, pepper, jalapeno
- Preheat the oven to 375.
- Saute onions for about 2 minutes until they are translucent, add garlic, carrots, celery and cook for about 3 more minutes.
- Add veggie mixture, thyme and capers to the ground pork, season with salt, pepper, jalapeno, mix well and stuff the mushrooms.
- Place in the oven for about 25 min, garnish with the fresh thyme leaves.
