Roasted Red Peppers with Walnut Paste (bulgaruli nigvzit ბულგარული ნიგვზით) is a heavenly delicious and gorgeous looking appetizer.

Ingredients

  • 3 red bell peppers
  • 1 cup walnut
  • 1 garlic clove
  • 1/3 cup of pomegranate seeds
  • 2 tablespoons vinegar
  • ½ teaspoon each, ground coriander, fenugreek, marigold, red pepper flakes
  • Salt and pepper
  • 2 tablespoons oil
  • 1/3 cup water to thin the sauce


Directions

  1. Preheat the oven to 400 F.
  2. Cut the red peppers into three or four wide stripes, place them on the baking sheet, drizzle olive oil, sprinkle salt, pepper and place in the oven for about 25 minutes.
  3. Meanwhile, place the walnuts, garlic, spices and vinegar in a food processor and process, gradually add water to thin the sauce (should have the pesto consistency).
  4. Check the taste and adjust the seasonings, move into the bowl, add pomegranate seeds and stir gently.
  5. After the peppers are roasted and cooled down, spread the walnut paste over and fold the peppers.
  6. Let them sit for about 30 minutes to set the flavors.
