Roasted Beet Salad

Beets are one of my favorite vegetables, they are perfect with balsamic, garlic, red onion, cilantro and olive oil. Beets are sweet and it absorbs the flavor from the dressing and herbs. It’s a great side dish or salad on it’s own.


  • 2 medium size beets
  • 3 garlic cloves, chopped
  • ¼ medium red onion, sliced
  • Few sprigs cilantro, chopped
  • 3 Tbsp. olive oil
  • 2 tbsp. balsamic vinegar
  • Salt, pepper


  1. Preheat the oven to 400 F
  2. Peel and slice the beets to ½ inch thick slices, place on the foil, add garlic, salt, pepper, drizzle olive oil, close the foil well and place in the oven for 40 minutes or until the beets are cooked through.
  3. Take the beets out from the oven, drizzle balsamic, add onions, cilantro and a bit more olive oil.
