Potato Salad with Radishes and Red Onions

Easy and delicious potato salad. This time I added lemon zest, lemon juice, sliced radishes and red onions. Perfect salad for lunch or dinner.


  • 1 pound fingerling potatoes
  • 5 radishes, sliced
  • 1/4 red onion, sliced
  • 1 tap. Dijon mustard
  • 1 tsp. Lemon zest
  • 2 tbsp. Lemon juice
  • 2 tbsp. Apple cider vinegar
  • 4 tbsp. Olive oil
  • salt, black pepper


  1. Boil the potatoes for 20 minutes or until they are cooked through.
  2. In a mixing bowl, put sliced onions, radishes, mustard, lemon zest, juice, vinegar, olive oil, salt and pepper.
  3. After the potatoes are cooked and cooled down, cut into cubes and add to the bowl, gently mix and serve.
