Mushrooms in Cream (soko arajnit სოკო არაჟნით) is an amazingly rich, tasty and wonderful dish. It can easily claim to be in high class restaurant menu. Cinnamon and cloves give it a delicate flavor and heavy cream gives richness to this dish. Very easy to prepare at home and is great with grilled or oven roasted chicken.
1 pound mushrooms (I used mix or shiitake and cremini)
1 cup sour cream
About two-inch piece cinnamon stick
2 green cardamoms
5 whole black peppercorns
2 tablespoons butter
1 bay leaf
Salt and freshly ground black pepper
Melt the butter in the pan and toss sliced mushrooms, stir and cook on a high temperature for about 2-3 minutes, season with salt and freshly ground black pepper.
Add Sour cream over the mushrooms.
Tie the spice mixture in the cheese cloth and put it in the pan with mushrooms.
Let it simmer for about 10 minutes on a low heat, until the sauce thickens. Discard the cheesecloth.
