Meatball Soup with Rice

Gufta is a Georgian version of meatball soup, cooked in tomato sauce and broth. It’s an excellent meal for cold winter nights.


  • 1 pound mix beef and pork, ground
  • 1 small onion, thinly chopped or pulsed in a food processor
  • 1 egg
  • 1/2 cup sushi rice
  • 1 cup tomato sauce or chopped fresh tomatoes
  • 1 garlic clove, minced
  • 1/2 cup cilantro, chopped
  • 4 cups water
  • 1 bay leaf
  • Salt and red pepper flakes


  1. Boil the water in a medium pot.
  2. In a bowl, mix ground meat, rice, egg, ½ tomato sauce, part of the herbs, season with salt and red pepper flakes, and make walnut size balls.
  3. Drop them carefully in a boiling water, add the rest of the tomato sauce, and cook on medium low heat for 30 minutes until the rice is cooked through.
  4. Add the rest of the herbs and garlic, taste and adjust the seasonings.
