Kale salad with walnuts and pomegranate seeds is an easy, refreshing and delicious healthy dish. I love the texture of kale even after it wilts a little after you add the dressing. It’s a perfect source of iron and protein.
- 1 bunch kale, ribs removed and leaves cut into an inch size ribbons
- 2 tbsp. olive oil
- 1 lemon juice
- 1 tsp. Dijon mustard
- ¼ cup pomegranate seeds
- ½ cup chopped walnuts
- Salt, pepper
- Put the kale in a medium mixing bowl. In a small bowl, whisk together mustard, lemon juice, oil, salt and pepper.
- Pour the mixture over the kale and using your hands, rub the dressing into the leaves.
- Add walnuts and pomegranate seeds.
