Kale Salad with Walnuts and Pomegranate Seeds

Kale salad with walnuts and pomegranate seeds is an easy, refreshing and delicious healthy dish. I love the texture of kale even after it wilts a little after you add the dressing. It’s a perfect source of iron and protein.


  • 1 bunch kale, ribs removed and leaves cut into an inch size ribbons
  • 2 tbsp. olive oil
  • 1 lemon juice
  • 1 tsp. Dijon mustard
  • ¼ cup pomegranate seeds
  • ½ cup chopped walnuts
  • Salt, pepper


  1. Put the kale in a medium mixing bowl. In a small bowl, whisk together mustard, lemon juice, oil, salt and pepper.
  2. Pour the mixture over the kale and using your hands, rub the dressing into the leaves.
  3. Add walnuts and pomegranate seeds.
