Chvishtari is a traditional Georgian dish made of corn flour and cheese. Usually, we use fresh lightly salted cheese in it, something like Mexican queso fresco. But I also like the combination of feta and mozzarella. There are so many corn flours in the supermarkets that it’s hard to find the one that is close to the texture of Georgian corn flour. The one that I like is Bob’s red mill’s corn flour.
- 2 cups corn flour
- 1 cup water
- 1 cup mix of feta and mozzarella
- 4 tablespoons oil if you fry in the pan, if you are baking in the oven, no oil needed
