Chopped Salad

The ideal chopped salad is a blend of the freshest, most colorful ingredients the produce aisle or farmer’s market has to offer. Summer is the perfect season for this salad. You can easily get fresh romaine lettuce, juicy tomatoes, crunchy cucumbers,  corn and avocados. I found the recipe in book about the restaurants in Fairfield county. It’s simple, fast and very refreshing.


  • 1 romaine lettuce, chopped
  • 1 large tomato, diced
  • 1 small cucumber, sliced
  • 1 shallot, sliced
  • 2-3 sprigs scallions, chopped
  • ½ cup corn, cooked
  • ½ cup grated Parmesan cheese
  • 1 avocado, diced
  • 2 Tsp. Dijon mustard
  • 2 Tbsp. olive oil
  • 1 lemon juice
  • Sat, pepper


  1. In a large bowl, mix all salad ingredients
  2. In a small bowl mix dressing ingredients, toss over the salad, gently mix with hands and grate some cheese over
