Chickpea salad is an easy and tasty dish, perfect for lunch or dinner. You can replace almond with any other nuts (pumpkin seeds will be great), add more veggies (carrots, red bell pepper). It’s a basic recipe and you can play with the ingredients you have in your pantry and fridge.
- 4 cups chickpeas
- 1 cup toasted almonds), roughly chopped
- 2 celery sticks, diced
- 1 shallot, diced
- 3 tbsp. dill, chopped
- 3 tbsp. olive oil
- 3 tbsp. lemon juice
- 1 tsp. lemon zest
- Salt, pepper
- In a large bowl, mix first 5 ingredients.
- In a small bowl whisk olive oil, lemon juice, lemons zest, salt and pepper.
- Pour the dressing over the chickpeas, toss and let it sit for 30 min to incorporate the flavors.
