Beans in Tomato Sauce

Easy, delicious and hearty meal.


  • 2 cups cooked beans with 1 cup cooked liquid
  • 1 cup tomato puree
  • 1 tablespoon tomato paste
  • 1 small yellow onion, chopped
  • 1 clove garlic, minced
  • 2 tablespoons oil
  • 1/2 teaspoon coriander, ground
  • 1/2 teaspoon fenugreek, ground
  • 1/2 cup tarragon, chopped (substitute with cilantro)
  • 1/2 teaspoon paprika
  • Salt and pepper


  1. Heat the oil in a skillet and sauté onions on a low heat for about 10 minutes, stirring constantly. Add crushed garlic and cook one more minute.
  2. Add the tomato puree and tomato paste, stir and cook about 4-5 minutes on a medium-low heat.
  3. Add coriander, fenugreek, salt, pepper.
  4. Add cooked beans with a cup of water or bean liquid and cook for 10 minutes, covered on a low heat, until all the flavors incorporate.
  5. Sprinkle chopped tarragon or cilantro.
  6. Adjust the seasonings. Add red pepper flakes if you like spicy.
